Ingredients

500g of potatoes
100g of flour
1 pinch of salt
1 egg
30g of butter
4 apricots
8 sugar cubes
100g of breadcrumbs

1. Cut boiled potatoes into small pieces.

2. In a bowl, put the pieces of potatoes, the flour, the salt, the egg and the butter. Knead all the ingredients by hand in order to have an homogeneous and flexible dough. Let it rest for a few hours.

3. Cut the apricots in half and remove the pit. Flatten the dough on a lightly floured work surface.

4. Spread evenly the apricots over the dough and cut it into squares around each apricot. Put a sugar cube in the center of each apricot.

5. Form a ball around each apricot with the dough.

6. In a large pot, boil water and carefully put the knödels. Wait for about 15 minutes (until they rise) and take them out.

7. In a pan, melt butter and add the breadcrumbs.

8. When the breadcrumbs start to brown, pour it on the knödels.

Suzanne Achache – Wiznitzer was born on June 19, 1929 in Vienna. “I journeyed across the century and Europe, it’s difficult to make it short! My mother was a scandalous women. She was going to cafés, playing cards for money and was constantly losing what she had. She died from cancer in 1937 and was buried in Vienna. In 1938, I set off for France. My father and my brother were deported in 1942. By chance, I met Madam Chesneau who was opening her door to ‘all the children we didn’t know what to do with’. At the end of the war, I stayed one year with her. Then, I was taken care of by Nathan and Hélène Samuel at the OSE organization, who gave me the opportunity to study. I have chosen medicine because ‘it helps people out’. I met the father of my four children. I became a surgeon. Not dentist. Sto-ma-to-lo-gist. And later, psychoanalyst. I have 9 grandchildren and 9 great-grandchildren.”
Mona Achache is a director and a screenwriter. She does both fictions and documentaries for cinema and television. She has 3 children and cooks alright.
