Frikkadel

Ingredients

  • 500g ground beef
  • 500g ground pork
  • flour
  • 1 egg
  • 1 glass of milk
  • salt and pepper
  • butter

1. Mix the two meats.

2. Take out a quarter of the mix and fill the empty space with flour. Put the quarter of the meat mix back (her personal technique to measure how much flour she needs).

3. Add a glass of milk.

4. Add an egg.

5. Salt and pepper.

6. Then mix it all until it is homogeneous.

7. Fry on low fire in a pan with butter.

Sonia Debeauvais was born in 1925 in Denmark. She has been working with Jean Vilar from 1956, helping him in the creation of France’s most important theater festival – Festival d’Avignon – where she worked for 30 years. Frikkadel is the only recipe she kept from her Danish roots and the only recipe she transmitted down to me.

I was born in 1979. I directed two feature films, in 2010 and 2015. Two short films as well. Oh and I’m Scorpio with Virgo rising, that’s important.
